About the Process
Ripe red cherries are meticulously hand-selected and sorted before undergoing honey processing, where the mucilage remains intact during depulping. The coffee is then carefully dried on raised African beds for approximately 18–22 days, depending on weather conditions.
Las Margaritas is a family-run farm nestled in the mountain town of Santa Maria de Dota in south-central Costa Rica. Founded in 2013 by producer Emmanuel Solis, the farm is dedicated to cultivating exceptional cup profiles while maintaining sustainable practices, including the complete avoidance of herbicides.
